The meat is flash-frozen after slaughter to optimally preserve freshness, color, and juiciness. Weighing approximately 800g per piece, this rack of lamb is the perfect size for two and combines pasture-raised flavor, tenderness, and natural elegance in an outstanding cut.

Description of taste & preparation

A rack of lamb from New Zealand is more than just a piece of meat – it's an expression of a unique pasture culture. The lambs graze on expansive, grassy hills in a mild and consistent climate. These natural conditions shape the flavor of the meat: delicate, balanced, and clean-lined, without the robust intensity of some continental lambs. The result is a cut of lamb that will satisfy both gourmets and purists alike.

The rack of lamb comes from the rib section – a particularly tender cut that sees minimal use. The "cap on" cut leaves a fine layer of fat on the meat, which melts slowly during cooking, ensuring a consistently juicy texture. The bones are carefully exposed during the "Frenching" process, giving the cut its characteristic, elegant silhouette.
This shape not only makes carving easier, but also ensures a particularly appetizing presentation – whether arranged as a classic rack or as individual cutlets.

In the kitchen, the rack of lamb proves versatile and reliable. For perfect results, a combination of searing and gentle oven cooking is recommended. First, the rack is seared in a cast-iron pan to create a golden-brown crust. Then, it continues to cook in the oven at approximately 150°C until an internal temperature of around 55–58°C is reached – ideal for medium-rare.
After cooking, the meat should rest for a few minutes so that the meat juices can distribute evenly and the aroma can fully develop.

This New Zealand classic also shines on the grill. Seared over direct heat and then finished over indirect heat, it produces a wonderfully aromatic result with a delicate smoky flavor. The layer of fat enhances the natural taste, while the bones act as a natural heat buffer, keeping the meat juicy.

Culinary-wise, the rack of lamb harmonizes beautifully with Mediterranean herbs such as rosemary, thyme, and oregano, as well as subtle aromas of garlic, lemon zest, or Dijon mustard. A delicate herb crust made of breadcrumbs, olive oil, and fresh herbs adds extra texture to the dish. Seasonal vegetables, creamy potato gratin, or a fine ratatouille make excellent accompaniments.
A jus made from red wine or port wine accentuates the natural sweetness of the lamb without overpowering it.

For those who prefer a purist approach, the rack of lamb can also be cooked sous-vide and then briefly seared in clarified butter. This method emphasizes the exceptional tenderness of the New Zealand grass-fed lamb and preserves its delicate, natural flavor particularly well. In all variations, the impression remains the same: this meat is incredibly tender, juicy, and exudes the aroma of the nature in which it was raised.

Try now

If you love lamb or want to finally experience it at its best, this New Zealand lamb rack is the perfect choice. It combines naturalness, elegance, and culinary precision in a cut that impresses even seasoned chefs. Enjoy it classically in the oven or modernly grilled – every piece tells a story of pristine pastures, a clean climate, and the artisanal care that good meat deserves.

Your questions about the product and our answers

How many ribs does a rack of lamb from New Zealand have per piece?

A typical New Zealand rack of lamb has seven to eight ribs. This number can vary slightly depending on the cut and the size of the animal. Each rib forms a uniform chop section that can be easily carved after cooking. The "frenched" cut means that the rib bones in the upper part have been carefully exposed – this ensures the classic, elegant presentation.
Weighing around 800g, a whole rack offers the perfect portion size for two to three people, especially when served with side dishes. Compared to continental lambs, New Zealand racks are generally more compact, resulting in a particularly tender texture and even cooking. The bones act as natural heat reservoirs, helping to keep the meat succulent – a crucial advantage for consistently high quality.

What does "frenched" mean when referring to a rack of lamb?

"Frenched" describes the artisanal technique of exposing the rib bones of a rack of lamb in the upper section. The butcher removes excess fat and meat around the bones, leaving them clean and exposed. This isn't purely decorative – the exposed bones make carving easier, reduce cooking time, and ensure a more even result.
A well-executed Frenched cut demonstrates superior butchery skills and attention to detail: the meat structure remains intact, the surface smooth, and the meat caramelizes evenly during cooking. In the kitchen, this cut is particularly valued for its appealing presentation – ideal for festive menus, barbecues, or elegant main courses. The "Frenched Rack" is therefore not only visually appealing but also a premium cut in terms of functionality.

What is the ideal core temperature for New Zealand lamb chops?

The recommended core temperature depends on the desired level of doneness. For a tender, pink result, a temperature of around 55°C (medium rare) is recommended; at 58–60°C you will get consistently juicy, but slightly firmer meat (medium). Above 65°C, the lamb loses its juiciness and delicate flavor. Resting is important: After cooking, the rack of lamb should rest, covered, for 5–10 minutes to allow the juices to redistribute.
A good kitchen thermometer is the best guarantee for perfect results. Since the New Zealand lamb rack is cut evenly, the cooking time can be precisely controlled. Whether in the oven, on the grill, or sous-vide – the key is not to overheat the meat and to preserve its tender texture. This allows the characteristic flavor of the grass-fed lamb, with its mild, slightly nutty notes, to develop optimally.

If you have an important event coming up – like a wedding, a birthday, a big BBQ, a concert, or (very tricky) a visit from your mother-in-law – it's best to plan in a buffer day. This gives us time to react if something is unexpectedly out of stock or if there are any issues with shipping.

For larger events, it's best to send us your order number directly by email or in the notes – that way we know everything needs to run perfectly. And it will.

Because for us, quality comes before speed. We're not a warehouse outlet selling mass-produced goods. Every product is handled by master craftsmen, freshly portioned, inspected, and carefully prepared.

But: Don't worry, we usually procure everything within 24 hours.

Conclusion: If you plan with enjoyment in mind, plan for an extra day. And it pays off – we promise.

Note on the refrigerant – Why we use dry ice

To ensure your freshly portioned meat arrives truly fresh, we include a small "cooling marvel" called dry ice in the package for shipping. Dry ice is frozen carbon dioxide (CO₂). Unlike regular ice, which consists of water, dry ice evaporates directly into CO₂ gas instead of melting. This allows it to maintain a consistently low temperature inside the package without any liquid water accumulating.

Why do we use dry ice?
Quite simply: We want to ensure your meat stays cool and fresh at all times – even if the package takes a little longer to arrive. Dry ice maintains an extremely low temperature, so the meat is optimally protected from heat. The result: sustainable and safe transport that preserves the quality of the meat.

What happens to the meat during transport?
Your meat is kept frozen during shipping. The cold causes the surface of the meat to contract slightly, which can sometimes result in a thin layer of ice. This may look unusual, but it is perfectly normal.

Why do ice crystals form on meat?
At such low temperatures, tiny ice crystals can form on the surface of the meat. This happens if some moisture accumulates within the packaging system or if the surface tissue of the meat is slightly moistened. These small crystals have absolutely no impact on quality or taste – they are simply an indication that the meat has been intensely chilled.

How do you maintain the full quality of the meat?
Thanks to this careful cooling process, the quality of your meat is fully preserved. Upon receipt, you can easily freeze the meat and store it for later. Alternatively, you can gently thaw it in the refrigerator and enjoy it immediately. Whether you put it straight on the grill or store it in the freezer first, you can be sure you're getting the best freshness on your plate.
