Pomeranian heifer beef tenderloin is an exquisite cut of meat, renowned for its exceptional tenderness and delicate flavor. The Pomeranian heifer, a breed of cattle raised in the picturesque region of Pomerania, yields meat of the highest quality. Humane husbandry and a natural diet play a crucial role in developing the unique flavor profile and texture of this beef.

Pomeranian heifer beef fillet – A culinary delight:

  • Excellent meat quality: The fillet, also known as tenderloin, is the most tender cut of beef and offers an unparalleled taste experience. Pomeranian heifers are renowned for their high-quality meat, characterized by fine marbling and a succulent texture.
  • Natural rearing: The cattle enjoy free-range and natural rearing in the Pomerania region, where they graze on extensive pastures. This environmentally friendly and sustainable form of agriculture contributes to the quality and taste of the meat.
  • Versatility in preparation: The fillet of Pomeranian heifer beef can be prepared in many ways – whether pan-fried, grilled, or braised in the oven. It is perfect for fine steaks, tender beef fillet tips, or as a base for exquisite gourmet dishes.
  • Sustainability and animal welfare: Buying fillet from Pomeranian heifers not only supports local agriculture and promotes sustainable practices, but also ensures high animal welfare.

A highlight for every meal:

Pomeranian heifer beef fillet is the ideal choice for special occasions, upscale dinners, or simply to add a culinary touch to everyday life. Its rich flavor and tenderness make every meal a feast for the senses.

Preparation tips:

To unlock the full potential of the tenderloin, it is recommended to let the meat come to room temperature before cooking. A short, high-heat searing followed by gentle cooking at a lower temperature ensures a perfect result. The tenderloin should be sliced across the grain to guarantee maximum tenderness.

Here's the best way to prepare beef fillet.

Pomeranian heifer beef tenderloin represents a special quality of meat, achieved through species-appropriate husbandry and special feeding methods in the Pomerania region. Pomeranian heifers are known for their tender and flavorful meat, making the tenderloin one of the most sought-after cuts. Here is a general guide to getting the most out of a Pomeranian heifer beef tenderloin:

Selection of beef fillet:

  • Quality features: Look for a fillet with fine marbling and a deep red color. The meat should appear firm and juicy, indicating freshness and high quality.

Preparation:

  • Room temperature: Allow the beef fillet to rest at room temperature for about 30 minutes before cooking to ensure even cooking.
  • Spice up: A simple seasoning with sea salt and freshly ground black pepper enhances the natural flavor of the high-quality meat. Garlic, rosemary, or thyme can also be added if desired.

Preparation:

  • Fry: Heat a pan (preferably cast iron) over high heat. Add a little high-quality oil and sear the fillet on all sides until it has developed a nice, golden-brown crust.
  • Cook in the oven: Transfer the seared fillet to a preheated oven at approximately 135-150°C. The cooking time depends on the thickness of the fillet and the desired degree of doneness. For a medium-rare result, aim for an internal temperature of approximately 55-60°C.
  • Cook with liquid: Optionally, you can add some red wine, broth or water to the pan before placing the fillet in the oven to use a moist cooking method and create a sauce.

Rest phase:

  • Rest time: Let the beef tenderloin rest for about 10 minutes after cooking before slicing it. This allows the juices to redistribute evenly throughout the meat.

Arrange and serve:

  • Cut open: Slice the beef tenderloin into medallions or serve it whole. The meat should be nicely browned on the outside and tender and juicy on the inside.
  • Attachments: Serve the beef fillet with side dishes that complement its flavor. Roasted vegetables, mashed potatoes, or fresh salads are popular choices.

And finally ...

A fillet of Pomeranian heifer beef offers an unparalleled culinary experience. With proper preparation and careful cooking, you can fully appreciate the outstanding quality and delicate flavor of this premium meat. Whether for a special dinner or as part of a festive menu, a Pomeranian heifer beef fillet promises an unforgettable taste sensation.

But here's our tip:
If you have an important event coming up – like a wedding, a birthday, a big BBQ, a concert, or (very tricky) a visit from your mother-in-law – it's best to plan in a buffer day. This gives us time to react if something is unexpectedly out of stock or if there are any issues with shipping.

For larger events, it's best to send us your order number directly by email or in the notes – that way we know everything needs to run perfectly. And it will.

Because for us, quality comes before speed. We're not a warehouse outlet selling mass-produced goods. Every product is handled by master craftsmen, freshly portioned, inspected, and carefully prepared.
And yes – that's exactly why it can happen that something is sold out at short notice.

But: Don't worry, we usually procure everything within 24 hours.

Conclusion: If you plan with enjoyment in mind, plan for an extra day. And it pays off – we promise.

Note on the refrigerant – Why we use dry ice

To ensure your freshly portioned meat arrives truly fresh, we include a small "cooling marvel" called dry ice in the package for shipping. Dry ice is frozen carbon dioxide (CO₂). Unlike regular ice, which consists of water, dry ice evaporates directly into CO₂ gas instead of melting. This allows it to maintain a consistently low temperature inside the package without any liquid water accumulating.

Why do we use dry ice?
Quite simply: We want to ensure your meat stays cool and fresh at all times – even if the package takes a little longer to arrive. Dry ice maintains an extremely low temperature, so the meat is optimally protected from heat. The result: sustainable and safe transport that preserves the quality of the meat.

What happens to the meat during transport?
Your meat is kept frozen during shipping. The cold causes the surface of the meat to contract slightly, which can sometimes result in a thin layer of ice. This may look unusual, but it is perfectly normal.

Why do ice crystals form on meat?
At such low temperatures, tiny ice crystals can form on the surface of the meat. This happens if some moisture accumulates within the packaging system or if the surface tissue of the meat is slightly moistened. These small crystals have absolutely no impact on quality or taste – they are simply an indication that the meat has been intensely chilled.

How do you maintain the full quality of the meat?
Thanks to this careful cooling process, the quality of your meat is fully preserved. Upon receipt, you can easily freeze the meat and store it for later. Alternatively, you can gently thaw it in the refrigerator and enjoy it immediately. Whether you put it straight on the grill or store it in the freezer first, you can be sure you're getting the best freshness on your plate.
