Prepare Leberkäse in the oven or air fryer – perfect & juicy
A meatloaf in an aluminum container or sliced is ideal for uncomplicated enjoyment with maximum flavor. Whether classic, pizza-style, or cheese-jalapeño – with the right preparation, it becomes crispy on the outside and wonderfully juicy on the inside.
Preparation
Take the meatloaf out of the refrigerator about 20-30 minutes before preparation so that it can cook evenly.
Lightly score the surface in a cross pattern – this ensures a nice crust and better heat distribution.
Preparation in the oven
Preheat the oven to:
- 180 °C fan-assisted or
- 200 °C top/bottom heat
Place the meatloaf in the aluminum container on the middle shelf.
- Baking time: approx. 55–65 minutes
For an extra crispy crust, you can increase the temperature in the last 10 minutes or briefly use the grill function.
Preparation in an air fryer
The air fryer is a quick and convenient alternative – perfect for smaller quantities or when you need things done faster.
- Temperature: 160-170°C
- Time: approx. 45–55 minutes
Important:
The aluminum container must fit inside your air fryer and the air circulation must not be blocked.
For extra roasted flavor, you can increase the temperature to 180 °C for 5–10 minutes at the end.
Especially with pizza-meatloaf and cheese-jalapeño, this ensures that the cheese components become slightly crispy.

Determining the cooking point
The meatloaf is ready when:
- the surface is golden brown and slightly cracked
- a crispy crust has formed
- the core temperature reaches approximately 70–75 °C
Let it rest for 5-10 minutes after cooking so that the juices are optimally distributed.
Serve in a bread roll with mustard
Cut the meatloaf into thick slices and serve it in the classic way:
